There are parts of the the Cutters Practical Guide by W.D.F Vincent which contain information about gowns, this section (along with most of the other parts) can be found on costumes.org, see the following link for the relevant pages:

There are also drafts in the Climax System for Cutting Gentlemen's garments if you have access to a copy.
I also recently purchased a book detailing the correct etiquette for the colours and fabrics for hoods and gowns for the different faculties and level of graduate at Oxford. It may be useful if you are interested you can pm me.
